We take cask Finishing seriously and we will seek the outer limits of cask usage…

Glenfidich’s Brian Kinsman says: “The previous contents are important, but from my perspective it’s because of what it’s done to the oak. The oak is the constant, and the previous contents interact with that oak and remove certain things and add certain things; change the chemistry of the oak.”

It is precisely this interaction, this new chemistry we want to explore – to see what new Magic it can bring to fine craft whiskey.

In our exploration we will season casks with Sherries and Wine, we will purchase used cask from great vineyard sites and appellations like Howell Mountain and we will seek out experimental “wet casks” that carried liquids and foods rarely associated with whiskey.

100% Pure Organic Rye, Distilled in Chicago

Our first efforts will focus on Finishing American Rye. Rye was the first American Whiskey and it can achieve great depth and style.

Our first run was 100% organic Rye finished in Oloroso and young Tempranillo casks.
